How To Make Date Snickers

Date Snickers are a homemade version of the traditional candy bar, incorporating dates as a key ingredient.

Medjool Dates

These dates are a great choice because of their large size, natural caramel-like flavor, and sweetness.

I recommend purchasing pitted dates.

Medjool dates are a natural sugar that can replace processed sugars.

They also contain fiber which helps slow the release of carbohydrates giving you sustained energy, rather than a “sugar high”.

Peanut Butter

This recipe uses smooth peanut butter.

You can also use crunchy peanut butter, almond, cashew, or sunflower butter.

Peanut butter is high in protein, fiber, and healthy fats. It’s also a good source of dietary fiber and potassium.

This nutrient-dense food also helps keep your blood sugar stable.

Dark Chocolate

I use dark chocolate with at least 60% cacao.

It’s smooth, not too sweet, and sets quickly.

Dark chocolate contains cocoa solids, which are a good source of antioxidants. It also contains less sugar and fat than milk chocolate.

Peanuts

 I use chopped peanuts as a topping. You can use any nuts you like, chopped or slivered.

You can also skip the nuts altogether.

Since peanut butter comes from peanuts, they have the same nutrients as peanut butter, protein, fiber, and healthy fats.

Ingredients
  

  • 12 Medjool dates
  • 3/4 cup Peanut butter
  • 5 oz Dark chocolate chips
  • 1/2 cup Peanuts

Equipment

  • 1 Cookie sheet
  • 1 parchment paper

Method
 

  1. Place a sheet of parchment paper on a cookie sheet.
  2. Split open each pitted date and line them up on the cookie sheet. You can use a knife or just pull them apart with your fingers.
  3. Use a spoon to fill each date with peanut butter.
  4. Add peanuts to a ziplock bag and crush them with a heavy utensil.
  5. Microwave dark chocolate chips at 30 second intervals until melted.
  6. Cover each date in melted dark chocolate.
  7. Sprinkle dates with crushed peanuts.
  8. Place the cookie sheet in freezer for 20-30 minutes.
  9. Remove from freezer.

  11. Store in the refridgerator in an air-tight container.They'll stay good for about a month.
  12. You can also freeze your Date Snickers in an air-tight zip lock bag for up to 3 months.
